Vine Ripened Tomato Soup


Tomatoes stewed 500 gms
Flour 1 tsp
Onion, sliced 1
Celery, chopped 1 stalk
Boiling water 500 ml
Butter 1 tsp
Sugar 1 tsp
Paprika 1/4 tsp
Pepper 1/4 tsp
Salt to taste
Croutons and fresh cream to garnish


1) Simmer tomatoes, onion and celery for 20 mins.
2) Pass through a sieve then pour boiling water through the sieve into mixture.
3) Mix butter and flour to make beurre maine; add to soup and whisk till it thickens.
4) Add remaining ingredients and combine thoroughly.
5) Garnish with croutons and a whirl of cream and serve.
